Sweeten your summer with these freezer pops made with honey. Light and refreshing they're the perfect snack on a hot day.

HONEY... POP!
Cucumber-Coconut Pops
Crisp chunks of cucumber and coconut
give this freezer pop and unexpected sophistication. But not so much that the
kidos won’t want to gobble them up too.
1 1/2 c. coconut juice
2 T. honey
1 1/2 T. fresh lime juice
1 T. fresh mint, finely chopped
1/3 cucumber, julienned

Mix together first three ingredients,
and whisk until honey is completely dissolved. -
Add fresh mint and cucumber, and mix well to combine.

Spoon mixture into 4 popsicle molds, and place in freezer for one hour.

Place wooden popsicle sticks in the center of each mold, and let continue
to freeze for an additional 2-3 hours.

Raspberry Lemonade Pops
With a combination of raspberries and lemonade, this freezer pop is classic. Tart and sweet with a zing of berry, you’ll find yourself wanting to eat two, and with only 84 calories you just might.
1 c. water
1/4 c. honey
1/3 c. fresh lemon juice
4 oz. fresh raspberries

In a medium bowl, combine water, honey, and lemon juice. Whisk together until honey is completely dissolved.

Pour into 4 popsicles molds.

Divide whole raspberries between popsicle molds, placing them into the top of each mold. Let the popsicles set up in the freezer for about an hour before placing wooden popsicle sticks into the center of each.

Continue to freeze for 2-3 more hours.

Blueberry
Cream Pops
Creamy vanilla yogurt and sweet blueberries make this a pop for everyone’s palate. Consider using low fat yogurt to trim calories.
1 c. vanilla yogurt
1/4 c. honey
4 oz. fresh blueberries

Combine all ingredients in a
food processor, and blend until completely smooth. -
Divide mixture into 4 popsicle molds.

Place molds into freezer, and let yogurt mixture set up for about an hour.

Place wooden popsicle sticks into the center of each treat, and let them continue to set up for an additional
2-3 hours.
